Is hyper-v server core supported for backup yet?
I cant seem to find a specific answer and the documentation seems to say core is support but doesnt seem to be. I currently have a lab test for hyper-v server core with a single hyper-v server. I use windows backup for this test currently. I would like to use the free veeam backup instead (thus keeping the guest online for backup). Does veeam support hyper-v core server for hyper-v backup? If so, how do I install as it seems to complain about missing pre-requisites (which are desktop packages and cannot be installed in core)

Hey MW and welcome to the community!
You can assign a few backup components to machines running Core version, but you can't install Veeam B&R.
Please review Limitations and Recommendations section for additional details. Thanks!

Yes basically you need to install Veeam itself inside a VM or physical server running a full Windows install, but it can back up VMs running on Hyper-V Core just fine.
