Is there a requirement for all vsphere tags to appear after adding vCenter?
Because i am not seeing a lot of vSphere Tags to import on the Categorization Model wizard into Veeam ONE monitor client.

no, it must also work with tags that were there before.
If you cannot see them, I can only recommend to open a support case. Please post the case number here for reference.
