Instant Recovery Destination Options - Restoring a VM

Hi, I have a Server 2016 with Hyper-V and one VM is the Exchange server. I need to recover data from a VM backup around three weeks ago. My question is, while in Recovery Mode I have 2 options, 1. Restore to the original location or 2. Restore to a new location, or with different settings. Which is the best option without disrupting the current environment?

The Server is in full production so I don't want to interfere with this. Can I restore to the original location and this will run side by side with the current VM? It's my understanding this is an option with Veeam. Where I then could turn down the restored VM after I get the data.

You cannot choose option 1 since it will delete the original VM files. Thanks!

Other option I tried gives the error:
