Hi Everyone,
I am currently running Veeam Backup for Office 365, my question is if i delete a user from O365 and a couple of months go by can I restore the backup of the deleted users email or SharePoint contents to another user ?

This is possible as long as your retention policy allows it (which is configured inundeer the repository configuration). You can even do export to PST/MSG/ZIP files if needed.

First: Welcome to the forums,
Yes, that is possible. However, you will not see that user anymore in the latest backup. You will need to start the restore by right clicking on the organization and then choose to restore
