Instant Restore OS disk only

We keep running into this scenario and I'm wondering if there is a better way, or perhaps a future feature that can be added. Let's say we have a very large VM, 20TB for example. The OS isn't performing correctly, perhaps a virus, or something changed in the OS. We want to instantly restore the VM's OS back to the prior day, but not the 20TB data partition. Can this somehow be accomplished instantly?

That is, if OS and Data partitions reside on different VMDK disks.
