Restoring files from a Virtual Machine

I'm using Veeam Backup on a Windows Hyper-V server. It works great to make backups and I can restore a virtual drive and them mount to copy files from it. But the problem I'm having is with a virtual drive from a file server that stores user files that are restricted to the owner. I can take ownership of the folder and gain access but still, all of the files in the user folder can't be copied before going to each file security/permission and grant my user full permissions. What is a solution to this so that I could easily copy files from my mounted drive that I have restored?

Hello,
can you maybe explain what you mean with "mounted drive". Where do you mount what and how?

In the end, you need permissions, yes.

I restore the virtual drive on the VM Host and then right-click to mount it on the VM Host

Hello,
we can only restore from the VBR console. Inside the VM there is nothing to restore a virtual drive. Can you maybe point to the user guide or or describe each click?

In the console we have "Restore virtual disks" and "instant disk restore".
