Maybe a silly question, but I never asked myself about. But today it happened, that I´m started to install Windows Updates on a Server 2019 VM during the Veeam Backup. Is this a problem so far or only if I would recover exactly this state?

I wouldn't expect any issues if you triggered updates after VMware snapshot was created. Anyway, the best way to answer this question is to perform test restore, for example Instant Recovery to a new location or SureBackup.
