1 - Is it possible to apply a GFS flag to a earlier backup? Ex: full backup made last Friday. Is it possible to apply the flag to a specific backup in my existing backup chain?
2 - Is it possible to use GFS to backups stored in a SOBR repository? How can I apply a long-term retention in a S3 storage?

GFS Settings are per Job. This settings will be used for the SOBR as for any normal backup repository.2 - Is it possible to use GFS to backups stored in a SOBR repository? How can I apply a long-term retention in a S3 storage?
Capacity Tier Policys
If you have configured a move policy, the gfs restore points will be moved away (as soon the backup chain is sealed and the configured time period is over) from performance tier to the capacity tier. They will be kept on the object storage until the configured retention is over.
If you have configured copy policy, then the gfs restore points will be stored on performance and the capacity tier until their configured retention is reached.
If you are using Archive Tier in AWS or Azure, then you can offload old gfs restore points to the cheap Archive Object Storage for a really long term retention

To add to Fabian's absolutely correct answer, I would advise use Export Backup to make a longer-term restore point from a desired point as a workaround tot get the same effect.
