please assist install tape server on VM (vSphere 7.0)
I would like to ensure, Can I install tape server on VM (vSphere 7.0) via san switch and connect to tape device?

Hello,
the VMware forums might be a better place to ask, because from Veeam side, the connection type is irrelevant.
As far as I know, NPIV is only supported for disks from VMware side. That means connecting a tape device via fibre channel is unsupported
