Yes, you can.
You can choose if all versions or only the latest (History restore options) will be restored:

The version history of a restored file looks like this for me. The versions are available. But date and user were changed during the restor. Date and time is equal to the restore time. User is equal to Backup Admin.
Is there no other way?
