Does veeam recommend always to apply the latest patch-set? or wait until you encounter an issue then talk with support and then apply the latest patchsets or what is typically recommended?

James, it is always better to use our latest version due to many reasons. Since all known issues are described in this topic, you can review it and decide whether to upgrade or not. Generally, I would recommend to upgrade just to be on the safe side.
