I've got a Windows Server vm on ESXi 7.0. This Windows server is connected to a 2Tb+ iSCSI LUN which hosts files from our users. When added as a VM, B&R "sees" only the disks local to the VM, the iSCSI one is invisible.
How would you go about including the iSCSI LUN in the disks to be backed up?
(I presume installing a Veeam agent as though as if the system was physical might take care of it, not sure.)

You can use Veeam Agent for Windows in that case.
It will allow you to also backup the iSCSI LUNs which are not seen by VMware.
