I am new to Veeam, learning much as i go.
Mostly i have been in the VBR console setting up infrastructure and getting production-ready. Just this week i started with the VBM365 and the console is considerably less... "full." Like, where are the scale-out repos and tape library options and dedup/retention options? Is there something that i missed during installation or is the VM365 just way more limited in what it can do?

Yes, there is indeed a big difference in those two. It is because this is a solution that protects SaaS service and not your typical VMs.
I advise you to go through the manual as much as possible and ask for some advice here as a bad VB365 setup (depending on your size) could become difficult
