Hello,
Quick query, I initiated an Instant Recovery session, which was all fine. So then, I manually deleted the recovered VM from Hyper-V and the VHDs in file explorer. Now when I go back to Veeam it is saying the the status is "Dismounting" and it's stuck like that. Is there a way to force close that session or anything like that? I rebooted the Backup server but it's still there.

I suggest opening a support case. If your session is stuck, removing it from the configuration database could be required which needs a support case. We cannot share the MSSQL Query over the forum. Changing data in the configuration database by the customer is not supported without guidance of our support team.
For next time, please let Veeam delete the recovered VM if you want to stop the instant recovery session.

Thanks Mildur, I learned my lesson quickly! I've requested the reseller we purchase Veeam through raise a case for us.
