I would like to be sure, the Veeam one agent should be installed only on VBR server right ?
No need it on proxy, repository, ...

Yes, Veeam ONE Agents are only installed on VBRs, and it is not mandatory btw, not yet at least. Some information to be aware:

Please note, that the Veeam ONE server also has a preinstalled agent. Veeam Intelligent Diagnostic feature will not work without it.

Not sure it's the same question but I see VeeamOne can connect inside guest os VM.
I don't find in documentation what is it for ? Just to see process and services ? I would like to be sure I understand all the product usages.

I just see this : "will be used to collect data from Windows-based guest OSes on VMs"
But what data and to be used for what

Not the same, it is for VI monitoring. Gues OS credentials are used for In-Guest Processes / Services data.
