First: Welcome to the forums!
Second: The data of Microsoft ToDo is actually stored in a user his/ hers mailbox in Exchange Online. So as long as you protect that user, the data is protected.

Where is the ToDo data stored in the Exchange mailbox and how can i restore all/specific selected ToDo entries? i cannot find this within the VBO restore wizard.

To-Do items are stored in your mailbox as "tasks."
You can find and restore them in Veeam Backup for Microsoft 365 here:
