3 Proxies on 6 node cluster?
is it possible to use 3 proxy in an AHV cluster environment with 6 nodes? Or do I really have to have a proxy on every node?

Yes of course. With the current version 5.1 deploy the proxy appliance to the cluster and then add two "workers" from the proxy appliance web UI.
