I set backup policy schedule everyday of SharePoint , When I need to restore I can restore everyday until 7 years?

Normally yes, it depends what you have signed up for when it comes to the retention length of your data. You should be able to see that on your dashboard: https://helpcenter.veeam.com/docs/vdcm3 ... board.html
