I am trying to get a better understanding of Veeam Backup for Microsoft 365.
I currently backup to local repositories using the snap shot option and the retention period set to keep forever. I know Veeam Backup for Microsoft 365 doesn't store backups like VBR does. I currently backup the entire organization daily. Whenever a user leaves, whether by choice or getting let go, I backup up their PST file manually and store on a file share that gets backed up before removing the O365 license from the user. As I understand it the users data will be in the O365 backup forever because the retention policy on the backup job is set to Keep Forever. But to find the data from a user who is no longer licensed I would have to know when there license was removed so I know what restore point date to go back to so I can recover their files. Do I understand that correctly?
The idea my boss wants to do is create a one time backup of the user or users and store those backups in another location. Like doing a VeeamZip or a one time full back in VBR of a VM for archival purposes before deleting it. Is something like that do able? Would I just make a new O365 backup job every time I have users to backup for archival purposes? If I do that can I then delete the job when it is done? If so how would access those archival backs in the Veeam Explores for recovery?

There is no such thing as a one time backup of a user I'm afraid. However, you do not need to know the specific date though. Right click in the UI on the organization and choose a restore explorer. Then you will see all the users of the organization, including the ones that are out of back for a while.
