Not sure if our Enterprise (non Plus) would cover this scenario, I know I would need the WAN Accelerator in order have a somehow decent and troublefree backup.
But even with Enterprise Plus, would it be covered if I have a backup copy job running to a remote repository (not our own, but a friendly company) and they have a job running into our repository with their own licence ?

WAN Accelerators are included with Enterprise license, so you should be fine there. While WAN accelerators can help with such plans, do note they're not required, though for unstable or slower connections they will help mitigate such limitations.
Backup Copies will not consume licenses, however, ensure that the repositories you're discussing are not sharing the same path between two VBRs. There are a few considerations for such component sharing.

weird....took a look at the WAN accelerator and it said that I am lacking the Enterprise Plus licence.
Licence information clearly states we have the Enterprise (legacy socket based).
Not sure about the whole history of the configuration, just know they started out with V8 and Standard Edition and upgraded to Enterprise a few years back.
Pretty sure that the general setup was allways the same and with each new server the old configuration was simply used (they were still using some Powershell scripts from 2017 for the tape job).
...and looking deeper into the licensing it seems like the WAN accelerator is only usable with cloud connect backups.
You should update your users guide to reflect that
