Hello,
This is the second time I’ve encountered this behavior when performing a restore from a domain data backup in entire VM restore mode. Veeam correctly uses the acceleration mechanism, but when the VM has multiple disks, Veeam restores one disk at a time, even though all disks are visible in the restore window.
Also, the first disk starts restoring for several minutes, then gets paused while the second disk begins restoring, only to stop again and switch back to the first one. Is this normal behavior?

Doesn't sound correct, but can you confirm you checked the Proxy Requirements and if that low-memory scenario applies? It would be most easily checkable item that comes to mind at first blush which could cause sequential disk restores instead of parallel.
If you don't see the message in the restore window, it's best to open a Support Case and let Veeam Support review the restore logs. (Use the 3rd radio button to export from hosts, select the Veeam server itself, the gateway server for the DataDomain, and the proxy used during restore). Please also mention the name of the machine you tested with and the approximate time you started the test to help Support find the correct machine/restore session.

The gateway and proxy are a physical server connected in SAN, the requirements are more than met.
