Is anyone running larger (300 + VM) Clusters on Hyper-V and using Veeam for DR and orchestration? I am most interested in Replication speed.
In my experience it's always been comparatively slower (hyper-v replica, san to san, zerto, etc)
I guess I am asking what is the best hardware configuration to achieve the lowest RTPOs with Veeam replication? What is achievable?

You're comparing apples to oranges I'm afraid, streaming replication vs. snapshot-based. The latter is simply not designed for low RPO, usually our customers run it every 15 min or less often.
Veeam CDP is a streaming replication so it would have been the right comparison if it supported Hyoer-V.
