Have Linux servers been removed from Linux File explorer in Veeam 13? The interface has gotten much clunkier and unmanageable, so maybe I am missing it?

The UI didn't change at all actually. Only the icons where redone to vector graphics and forms/wizards were migrated to WPF. These changes were required for proper high DPI support and to implement dark mode.
But zero changes to the UX specifically, so the UI remained just as "clunky and unmanageable" as it has been for the past decade
in particular, Linux servers are still there as before.
Only hardened repositories were removed, in case that's what you're looking for. There's an existing discussion about that.
