How do you size a Nutanix proxy infrastructure ?
My customer will have 3 prism central = 3 nutanix proxy
However how much worker do I need ?
What is the worker cpu / ram recommended ?

It depends on your needs.
If you want the fastest backup speed, you may want to configure workers on each node of every cluster. But that would only improve situation if your current bottleneck is Source (you can check that in backup job statistics).
Veeam automatically sets recommended RAM and CPU based on # of parallel tasks you set up in the worker wizard. However in some cases you may want to increase CPU or RAM (in a the worker wizard, Advanced settings on the first step) if you get a warning that your worker does not have enough resources (these warnings may appear in backup or restore session).

ok, so one good idea could be to have 1 worker per node and see the bottleneck right ?

That would be a good starting point.
Also you can check total processing time: if it is already satisfactory, 1 worker might be enough
