Can I please submit a feature request for a report that details what SharePoint sites are being backed up??

Hi Mark,
We already have this functionality in Veeam ONE. You can create a Protected Objects report.
Example from my backup server showing only SharePoint Sites (you can also report on other objects like Mailboxes, OneDrive, or Teams):
