I have had a second tenant running for an acquisition for several months now and now its time to migrate the data from the old tenant to the new.
Would Veeam be a good choice for that? Could I simply do a Single-Event Migration by restoring a Veeam backup into the new tenant?
Not sure on the granularity I can get when restoring but I would want to restore all my Tenant A SharePoint sites into one single Tenant B SharePoint site (for archival purposes). \
I want to migrate all emails 1:1 (user1@tenanta.com > user1@tenantb.com).
Idk if I even need Teams information or not.
Or am I better off looking into a specialized solution for migrating tenants?

First, please let me say:
Veeam Backup for Microsoft 365 was build to protect and restore data. It is not a migration software.
If you are looking for Tenant migration, maybe better check out alternatives (applications, online services, Microsoft own migration services) which are build exactly for migration purposes.
As an example. For mailboxes, I would prefer a service which allows you to pre-sync 99% of all objects and then on the migration day only sync changed or new objects after you have reconfigured mx to the new tenant. It keeps the downtime for your users low.
To answer your question:
Migrating most of the data with VB365 is possible, but It's not a 1 click solution and probably must be scripted. Too many manual steps if not scripted.
SharePoint: A full restore of SharePoint data may take hours/days/weeks depending on how much data you have. Make sure the data was not encrypted with SharePoints encryption feature in the old tenant. The new tenant won't be able to decrypt it.
MS Teams data: cannot be restored to a new tenant.
Exchange Online: Restore should be scripted. Bulk restore of multiple mailboxes to another M365 tenants is not possible
