VBO Catch-All Job?
Currently I have 3 jobs created in VBO. 1 for email + archive, 1 for Onedrive and 1 for SharePoint sites. I have selected all the users and sites in each job. However, when I have new users added or sites created, it is not included in the existing job.
How should I create a Catch-All Job that could automatically backup any new users objects that are not processed by any backup job? Or I still need to manually include the user object in existing job processing?

This will always include all users or sites in the job for the specific data type:
1) Choose Organization
2) Edit it and choose the specific Data Type you want to backup with this Job:

You can edit your old jobs, remove the „old selection“ and add the new selection with „entire organization and choosen data Type“.
Veeam will not do a fullbackup again of the same user or site. Or delete any old data if you remove „the old selection“.
Do it with one job as a test, if it works fine for you, edit all jobs with the new selection.

If I do as below would it be possible:
Edit existing Job and select Organization, include Mails & Archive.
Add another job and select SharePoint sites.
Add another job and select few users that need to backup OneDrive data.

Yes, that will work.
For the Exchange and Archive Jobs, every new user will be automatically in the backup job.
For the sharepoint job, it‘s the same, if you also choose „organization with Type Sites“.
For the onedrive Job, only „the few users“ will be in the backup. You have to add manually new users if you want them to be in the backup job.

Nothing to add... .
Another solution would be to specifically work with security groups (or similar type of groups) but that depends on how your onboarding works. Most organizations I talk to have automation for onboarding new staff or for adding new sites or similar and reuse those groups to catch new items in the jobs
