Going to try to explain this the best I can. I like this process and would like to continue using it with the current "Backup Copy" method opposed to the old "Legacy Backup Copy Job".
Currently: I have a set of drives that I rotate each day and then each week. Example: Disk 1 is attached, Legacy backup copy job copies the backups to Disk 1. I then eject disk 1 to take off-site and insert Disk 2. I then choose Sync and the job is rerun to add the backups to Disk 2. Effectively I have 2 external disks with the same backup copies on them. Next day, Disk 2 is already attached, the "Legacy Backup Copy Job" copies the new backups to Disk 2. I eject Disk 2 and Insert Disk 1, run Sync to start another copy job. I have 2 external disks with the same backup copies on them. At the end of the week, I swap disk 1 out with Disk 3, so now Disks 2 & 3 play the swap game and I have Disk 1 with last week's backups on it. This goes on through about two months until disk one gets recycled again into the mix.
I like this setup. There's one on site ready to get new copies, there's one off site for safe keeping.
With our move to Hyper-V I had to create non-legacy "Backup Copy Jobs". Trying to do this the same way using the same drives, there is no sync option. If I manually use the "Start" option it completes within seconds at 100% with all VMs showing "Latest Restore Point Already Copied" but it isn't on the attached disk, it is on the previous disk.
How can I get a modern "Backup Copy" job to create two copies?
