Might have overlooked it in the User Guide, but is the deployment of proxy servers as VMs different than deploying physical servers? We have 4 remote offices throughout the US that have a small ESXi cluster with plenty of storage left on the chassis (IBM S Series Chassis). I wanted to deploy a new Win2K8R2 server to act as the proxy for each location, but wasn't sure if there was anything "special" I needed to do.

Nothing special, the deployment process is just the same. Generally, you don't even need to set up a dedicated VM to act as a proxy, but use existing VM instead. Please review the sticky FAQ topic for considerations on physical/virtual proxies and there are also a number of existing topics regarding that.
