I have a SharePoint server that runs the SharePoint apps AND the SharePoint databases on the same server. I have Application Aware processing enabled on that job. When I go in to test a restore, I have the following options, as expected. They both work fine.
Restore Application Items -> Microsoft SharePoint content
Restore Application Items -> Microsoft SQL Server databases
However, on a multi-server SharePoint farm, I have Application Aware processing only on the database server, and I only see the option for SQL Server databases. I do NOT see the option to restore SharePoint content from the database server. Must I have Application Aware processing enabled on EVERY server in the SharePoint farm in order to do a SharePoint item-level restore?

Yes, if you want an Item Restore Wizard to perform the needed workflow then you need to enable app-aware image processing in your SharePoint backup jobs.Must I have Application Aware processing enabled on EVERY server in the SharePoint farm in order to do a SharePoint item-level restore?
