Hello,
I find on documentation it's recommended to not enable encryption on the job target the datadomain.
If my workflow is :
Backup -> Hardened linux
Backup copy -> Datadomain
Does that mean I can encrypt the backup job but I shouldn't encrypt the backup copy ?
Or I should not encrypt both ?

You can encrypt the backup job to your linux repo. But make sure that backup encryption is disabled on your Backup Copy Job, and any other job that uses the DD as a target. Otherwise your DD will get very full very fast. On copy jobs, Veeam decrypts the backup when reading the source backup files before it copies it to the secondary repository.
You can encrypt the network traffic between Veeam gateway server and the DD. But that only works if it's enabled in the Veeam repository settings AND on the DDboost protocol on the DD. Either turn on global authentication mode and encryption strength, or set it individually for your Veeam gateway server under Protocols->DDboost->Allowed clients. ("Two-way password" is what you should set for authentication)
