Hello,
For offline backup needs we are currently rotating a cheap 8TB HD plugged into a USB3.0 drive bay every week and putting the week-old one in the fire safe. It's a pretty "hoaky" setup and I would like to improve it. Can anyone recommend options? I would love some sort of small 1U rack mount PC/server that could take hot swappable sata drives for the offline backup disk. Or some kind of rack-mountable SATA enclosure or something. Any ideas are welcome.

Hi Josh,
I cannot recommend on the offline local backup hardware, but have you considered not only the offline, but offsite backup using one of our VCSPs? Here is the promo campaign we're currently running. In this case you would not only have the offline, but the offsite backup too (in case of the local site complete failure).
