Is there a tech document on restoring an entire node of a SQL Always On group? Are we able to perform a complete restore or only the OS drives and then need to resync the databases from the active nodes? Do we remove the failed node from the Always on Group at some point or not? Step by step instructions would be great.

There is no such document but in the vast majority of cases, we expect that all nodes will be synchronized automatically because data replication in Always On is running permanently. You may have a look at this thread. The volume-level restore does nothing with an application and if some databases are in "Recovery Pending" or "Not synchronized" states, it will be up to DBA to put everything in order. Also, you have an option to restore databases using Veeam Explorer for SQL.
