We use veeam to back our MS SQL db's and last night one had serious corruption.
We're skeptical to restore the entire vm because they were synced to a point and dont know if going back will just resync or cause more damage.
Any advice?

I'm not a DBA, but I believe a way to go would to disable mirroring, restore your backups to a healthy state and then use standard procedures for restoring a mirrored database.
