Ports and traffic flow

I've been asked what ports are needed for a client in a spoke account to be backed-up by veeam?

So..

I have Veeam in a central tools account and the data-movers are instantiated in the tools account.

Do the data-movers talk directly to the instances I'm backing up in the production accounts, or is it all control plane activity?

If you do backups, then workers can be deployed in the worker accounts to mount the snapshot and backup the data. Data movement is done via workers, not the main appliance.
