In VMware you have the ability to just restore a vmdk from a vm to a VMware datastore. In Proxmox there's no such thing. I would like to be able to just restore a disk and hook it up to an existing VM like I am used to do with VMware.
Now you have to restore the whole Proxmox VM with different name and then you can change the VM config in order to use a restored disk as a work around.

no I mean you can just restore the vmdk files and the vmx file to a Vmware Datastore. So if you want to restore a datadisk and mount it on an existing vm you can just put the disk back on the datastore and then configure it as an extra disk in the existing vm.
With Proxmox there's no such thing. It would be handy to just restore a disk of a vm to the proxmox storage and then configure it as an extra disk in an existing vm. The option in VMware is called "Restore VM files"

Have you tried Virtual Disk Restore? I believe you may already be able to achieve your goal of "restoring a single disk and attaching it to an existing VM".
During Virtual Disk Restore, you can specify how the restored disk should be mapped to the target VM. The wizard allows you to select New disk as a mapping option.
