I'm a new user on Veeam. Here is the archi I've been thinking about:
VLAN X: Vcenter, Esxi1, Esxi2, Admin Console, veeam Server
VLAN Y: Production: AD etc....
The goal is to isolate backups from production. I understand that veeam just needs access to vcenter and Esxi. What about application aware processing? Does Veeam need to access the VMs and log in to activate Vss? Or can it do it via the Vmware tools?

Veeam recommends to use own guest processing as it treats the applications in a better way and enables you to di log backup and truncation if specific databases.
Job-Guest Processing.
Veeams Guest processing if enabled will be proritized and ignore then the VMware tools setting in the job.
There is as well a guest interaction proxy that helps with network security in your case.
