Documenting B&R infrastructure

I need to produce a document ad detailed as possible about an existing B&R infrastructure describing:
  • VM that are processed
  • Jobs
  • Schedule of jobs
  • Number of restore points for each VM
  • Reposotory used
  • ...
  • ...
Is there any tool to help extract and format the information in order to produce the report?

Yes, you can get the information in the report manner by using Veeam ONE Reporter.
Please take a look at the section called Veeam Backup Overview in the User Guide. Thanks!

Unfortunately Veeam ONE is not available.
Is there any other way?

Can you clarify why Veeam ONE isn't available?
Since you can install it with the trial license and get all the information. Thanks!

It's a long story.
Veeam ONE was installed and worked till a VMware vCenter change.
Data are available to that data.
Up-to-date data are not available, maybe I have to reinstall Veeam ONE but at the moment I can't.
Can I use PowerShell to extract up-to-date data?
Is there any sample I can start from?

Some information can be obtained through the Powershell cmdlets, but not much, for example, in order to obtain the amount of restore points stored in Veeam B&R DB you can use Get-VBRRestorePoint.
You can look through the list of available Veeam cmdlets in the Powershell User Guide. Hope this helps!
