Hi,
I disabled the SMB v1 on our NAS appliance so that it will just use SMB v2. But somehow our File Shares backup job failed with RPC error message. Is this failure related to the change we made? Is there a way to check and change the SMB version used by Veeam to connect to a File Shares?

I don't think it's possible to know from your description (the RPC error would help...), but I must write that you have a fundamental misunderstanding of SMB negotiation:

Clients don't get to decide the dialect, the server does.

Look at steps 1 and 2; much like SSL, SMB level is decided by the server, not the client.
You don't get to pick the level as the client; it's not NFS. SMB client and server will agree on the highest mutual version between the two of them being offered.
So, I'm not sure if this helps your issue (really, the error is needed), but your understanding of SMB connections needs to be adjusted.
