I have followed online directions on setting up Surebackup, but still can not get the "Ping" test to pass successfully. I have used both, the automatic and manual setup with no success. Help from someone who understands Surebackup's network setup well would be appreciated. Network settings I am using are below.

I can't say that I know Surebackup well as I just set it up here. Anyway I had similar problems you just described. I was able to resolve it by setting the Appliance IP to match the Default Gateway IP. So in your case the Appliance IP should be 192.168.0.1

I did change the Appliance IP to 192.168.0.1 and still no joy. I used manual setup in order to change the Appliance IP and see there is a Static Mapping entry that is not used. Do I need to use Static Mapping and if yes, what should be used for Isolated IP and Access IP?

It seems that your Win10-01 VM obtains an IP address from 192.168.255.0/24 network thus it will never be able to ping the 192.168.0.237 gateway because it's simply in a different network that is out of reach. Try to log in into your VM and check its network settings.
