Maybe I look for something that is out of the scope of the product, if so, please forgive me.
I have a job running every week to backup the entire PC.
Is there any way to create a second job to be started manually to backup a given directory or list of directories when needed (maybe when a critical change is made to the contents)?

Unfortunately, it not possible (VAW/VEB has one backup job at the moment). We are currently testing the workaround via configuration API to import and export multiple configurations, so if you are interested – feel free to participate

Just posting a link to this blog post which is an example of 2 different jobs (in this case 1 to a local server, 1 to the cloud) so it is possible.
